Ingredients:
- 2 cups of basmati rice
- 3 cups of chicken or vegetable broth
- 1 cup of fresh cilantro leaves, packed
- 1 cup of fresh spinach leaves, packed
- 1/2 cup of fresh parsley leaves
- 1 small jalapeño, seeded and chopped
- 3 cloves of garlic
- 1 small onion, chopped
- 2 tablespoons of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- Juice of 1 lime
Instructions:
- Rinse the Rice:
- Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch and keeps the rice from being sticky.
- Prepare the Green Blend:
- In a blender or food processor, combine the cilantro, spinach, parsley, jalapeño, garlic, and lime juice. Blend until smooth. If needed, add a little bit of the broth to help it blend smoothly.
- Cook the Aromatics:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.
- Add Spices and Rice:
- Stir in the ground cumin, salt, and black pepper. Add the rinsed rice and cook, stirring frequently, for about 2-3 minutes. This helps to toast the rice slightly and infuse it with the spices.
- Combine and Cook:
- Pour in the green blend from the blender and stir to coat the rice. Add the chicken or vegetable broth and bring to a boil.
- Simmer:
- Once the mixture is boiling, reduce the heat to low, cover the pot, and simmer for about 15-20 minutes, or until the rice is fully cooked and the liquid is absorbed.
- Fluff and Serve:
- Remove the pot from the heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish:
- Optionally, garnish with additional chopped cilantro or a squeeze of lime juice for extra flavor.
Tips:
- For added flavor, you can add a squeeze of lime juice or zest over the cooked rice before serving.
- This green rice pairs wonderfully with grilled chicken, fish, or as a side dish for tacos and enchiladas.
